Homemade Potato Gnocchi with tomato sauce
These are the gnocchi my Italian mom and nonna (grandma) taught me to make only with potatoes and flour.
Gnocchi seem simple to make but require some practice. Follow us and we'll teach you how to get the perfect light texture, not too soft, not too hard, just melt in your mouth delicious.
We will also make a simple tomato sauce to dress our gnocchi with. Talk about an economical yet delectable meal for your family!
You will need a large pot to boil the potatoes first, and then the gnocchi, a potato ricer, a clean work surface, a pot for the sauce, a skimmer (slotted spoon, strainer) to gently take the gnocchi out of the water.
Ingredients (for 4)
For the gnocchi:
- 500 g red potatoes
- about 150-200 g flour type 00
For the sauce:
- evo oil
- 1 garlic
- 1 carrot
- 1/2 celery stalk
- 1 small onion
- salt and pepper
- fresh basil
- 1 large can of San Marzano tomatoes
