Struffoli, an Italian Christmas classic
Struffoli, a classic Christmas Italian dessert from the area of Naples, is made of deep-fried little balls of fragrant dough, that are then coated in honey, sprinkles, and candied fruit. When still warm and sticky, they are shaped into a pyramid or wreath.
All skills are welcomed, we will guide you through the steps, and will have fun along the way.
We will need more or less 1 hour and 30 minutes. These are the steps:
- first, we are going to make the dough by hand using a scale to measure the ingredients, different sizes of bowls, and a spatula or a wooden spoon. If everybody wants, we can use a food processor;
- secondly, after the dough has rested for 20-30 minutes, we are going to cut little "nuggets of dough";
- thirdly, we are going to deep-fry the dough balls;
- lastly, we are going to coat the dough balls in honey, sprinkles, and candied fruit (optional) and arrange them in a pyramid or wreath shape.
Ingredients
- 400 g all-purpose flour or flour type 00
- 3 eggs
- 80 g butter, melted and cooled
- 40 g granulated or cane sugar
- 2 Tbsp liquor (limoncello, or anise, or orange liquor)
- 1 orange, the zest
- 1 lemon, the zest
- 1 leveled tsp baking powder
- pinch of salt
- about 600–700 ml peanut oil (or any other vegetable oil) for frying
Decoration:
- 250–300 g acacia honey or any light-colored liquid honey
- sprinkles
- candied fruits (or candied cherries)
- shaved almonds (optional)
