Chicken Biryani
Sumptuous one pot meal of delicious curried chicken layered with fragrant long grain rice. Accompanied by cooling yogurt based salad
What you will need:
For Chicken and Rice:
6 medium size Chicken pieces with or without bones
½ cup yoghurt
Spices: mix of powdered cloves, cinnamon, cardamom, pepper, cumin, coriander and fennel seeds (all or any that you have) or curry powder
Red chilli, or paprika (optional)
1 cup Sliced onion
1 tsp each chopped garlic and ginger
1/2 cup chopped tomatoes
mint leaves
saffron strands
cooking oil
salt
2 cups long grain rice like Basmati
2 tsp butter
For Salad:
1/2 cup Yogurt, 1 cup chopped cucumber, ½ tsp cumin powder, salt and sugar to taste
(For a vegetarian version, substitute chicken with 1 cup chopped and boiled mixed vegetables of your choice)
