Vegetable Pulao and Tadka Dal (Mung Beans) – Vegan/Vegetarian

Ah, the cuisine of India! And the aroma of its spices! It made the Europeans salivate and their daring explorers risk their lives to find a sea route to India! That remarkable cuisine is now yours to create and enjoy through this class. 

This class is limited to 8 people for an intimate and interactive experience. 

Pulao is an Indian dish made with long grain rice or basmati rice, spices, and lots of vegetables. It is very popular in Indian households. There are many regional as well as family variations to making it. We will be making a pulao entirely in the microwave! Its convenience is so unbeatable! This easy recipe is my go-to option on the days when I am tired and want a no-fuss, no-mess cooking. 

We will also be making ‘dal’– a soup made of split yellow mung beans, as an accompaniment to the pulao. It’s loaded with protein and delicious too!

Note: We will be doing everything, including chopping the vegetables, in class. No prepping required. 

Ingredients for Rice

  • 1/2 cup Basmati Rice  
  • 1.5 to 2 tablespoons oil
  • 3/4 cup frozen mixed vegetables (peas, beans, carrots, corn)
  • About 1/2 an onion
  • 1 green chili (optional) 
  • ½ inch cinnamon
  • 2 cloves
  • One small bay leaf
  • 1 teaspoon grated garlic (optional)
  • ¼ teaspoon grated ginger
  • ½ teaspoon cumin seeds
  • Garam Masala 
  • Turmeric powder (optional)
  • Cilantro to garnish
  • Salt
  • Water

Ingredients for Mung Dal Tadka

· ½ cup Split Yellow Mung Beans

· 1 small tomato

· ¼ teaspoon turmeric powder

· Red chili powder

· ½ teaspoon cumin seeds

· 2 dry red chilies (Optional)

- About 1/2 teaspoon lemon juice (optional)

· Salt
