Cooking Class

 Pakoras, Date-Tamarind Chutney, Masala Chai – Vegan/Vegetarian

Ah, the cuisine of India! And the aroma of its spices! It made the Europeans salivate and their daring explorers risk their lives to find a sea route to India! That remarkable cuisine is now yours to create and enjoy through this class. 

Join me as we prepare one of the most popular snacks of India. Pakoras are deep fried fritters. They are a perfect rainy-day snack, especially when served with a cup of hot tea. Pakoras usually go well with a condiment like date-tamarind chutney or ketchup. There are many regional variations of these fritters. In this class, we will be making pakoras from the northern part of India. We will also be making the date-tamarind chutney, and hot Masala Chai to go with the pakoras.

This class will be limited to 8 people for an intimate experience. 

Ingredients for Pakoras

· 1 white potatoes (about ½ cup chopped)

· Fresh spinach (not frozen) (about ½ cup chopped)

· 1 small/medium onion   

· 1 green chili (optional)

· Cilantro

· A pinch or two Cumin seeds 

· About ½ to ¾ cup Gram flour (Indian name is Chana Besan)

· 1 heaped tablespoon plain yogurt

· ¼ teaspoon red chili powder (optional)

· About ¾ teaspoon Garam Masala 

· Salt

Ingredients for Date-Tamarind Chutney

· ½ cup seedless dates

· ½ cup tamarind pulp or seedless tamarind

· ¼ to ½ teaspoon chili powder

· ½ teaspoon cumin powder

· ½  teaspoon dry ginger powder

· About ¼ to ½ cup Dark brown sugar or jaggery 

· Salt

  

Ingredients for Indian Chai (Tea)

· 3 to 4 Cardamom pods

· 2 to 3 Cloves

· ½ inch Cinnamon

· ½ to 1 teaspoon grated ginger

· 1 to 2 teaspoon tea leaves or 2 to 3 bags of regular tea bags

· Milk

· Sugar

Note: 

· In addition to other utensils you will need a tea strainer (such as HIC Harold Import Co. HIC Fine Mesh Tea Strainer from Amazon) and a blender.
