Paneer Tikka & Rava Kesari (Semolina Dessert) - Vegetarian

Ah, the cuisine of India! And the aroma of its spices! It made the Europeans salivate and their daring explorers risk their lives to find a sea route to India! That remarkable cuisine is now yours to create and enjoy through this class. 

This unique class combines dishes from the north and south of India.

Paneer Tikka is a popular snack from the northern Indian state of Punjab. This delicious dish is traditionally made by marinating paneer (Indian cottage cheese) and vegetables in a yogurt-based spice mixture and then grilling it in a tandoor (clay oven). Instead, we will be threading the paneer and vegetables in a skewer and broiling it in the oven. We will be serving it with store-bought green chutney.

We will also be making Rava Kesari- one of the easiest desserts made in most southern Indian households. Rava means semolina and Kesari means saffron (the spice) or orange color. This delicious dessert is made not only during festivals and auspicious occasions, but also consumed for breakfast. 

Note: No prepping needed. We’ll chop the vegetables in class.

Class limited to 8 people for an intimate experience. 

Ingredients for Paneer Tikka 

· Paneer (cut into about 1.5” cubes) 

· Red onions (cut into 1.5” square) 

· Bell peppers (red or green - cut into 1.5”)

· About 3/4 cup Greek yogurt

· 1 tablespoon ginger-garlic paste 

· Red chili powder 

· About 1/2 tsp. turmeric powder 

· 1 tsp. cumin powder 

· 1 tsp. coriander powder 

· About 1/2 tsp. Garam masala  

· 1 tsp. carom seeds (ajwain) 

· About 1 tsp. Kasoori methi 

· About 1 Tbsp. Gram Flour (Indian name-Chana Besan)

· oil 

Ingredients for Rava Kesari

· ½ cup Semolina (Indian name Sooji or Rava)

· ½-3/4 cup sugar

· About 6-8 Tbsp. Ghee 

· About 15 unsalted cashew halves

· ¼  tsp. cardamom powder

· A few drops of orange food color

· A few strands of saffron (optional)

· 1 ½ cup water
