Saag Paneer & Makki (Cornmeal) Roti –Vegetarian
Ah, the cuisine of India! And the aroma of its spices! It made the Europeans salivate and their daring explorers risk their lives to find a sea route to India! That remarkable cuisine is now yours to create and enjoy through this class.
The Saag (greens) Paneer and Makki (corn meal) Roti combination is a classic, delicious, northern Indian vegetarian dish. The mixture of spinach, mustard greens, and broccoli makes it a nutrient-rich food. The paneer (Indian cheese) adds protein to this delightful recipe. Saag Paneer is so tasty that you could actually eat it entirely by itself. However, we will make Makki Roti to go with it.
Note: We will chop some vegetables in class. However, there’s some prep work required. Please see instructions below.
This class is limited to 8 people for an intimate experience.
Ingredients for Saag Paneer
· About 5 cups spinach (10 oz bag)
· 1 cup broccoli heads
· 1 ½ cups mustard greens
· 10-12 paneer pieces (1”x1”) (you can add more if you prefer)
· ¼ cup cashews
· Onion (about 1 cup finely chopped)
· 1 tablespoon grated ginger
· About 1 tablespoon garlic
· 1/2 teaspoon red chili powder
· About 3-4 teaspoons Garam Masala
· 1/8 teaspoon turmeric powder
· 1 tablespoon butter or oil
· Salt
To Serve
· Finely chopped onion to garnish
· Ginger (optional)
· Butter (optional)
Ingredients for Makki Roti
· ¾ cup corn meal (finely powdered)
· 1 cup wheat flour (keep ¼ cup extra for dusting)
· 3-4 pinches carom seeds
· Salt
· Oil or ghee
In addition to other utensils you will need a blender, skillet, and a rolling pin or something equivalent, and parchment paper.
Prepping before class:
· Blend 1 cup corn meal to a smooth powder
· Wash and chop broccoli, spinach, and mustard greens
