CocuSocial Handmade Ravioli Class

Hey ravioli, you’re beautiful inside and out. Join Chef Candice in her LA kitchen for this highly interactive, hands-on class where you get to make a lovely ravioli dish from the dough, filling, and sauce from scratch in the comfort of your very own home kitchen. No need for a fancy pasta machine - it's time to roll up your sleeves and learn to make the pasta old-fashioned way, just like an Italian Nonna would!
In this virtual class, you will learn to make and knead the egg based pasta dough, then fill your ravioli with a classic ricotta filling, cook these pouches of yum to perfection, and finish off with Chef Candice's tried-and-true tomato based sauce. Chef Candice will walk you through step by step in real time, checking-in to make sure you are on the same page throughout the entire session. With this class, you will gain the basic knowledge of hand-rolled pasta and feel more confident to try making other types of pasta.
Prepare your mis-en-place ahead of the session (this step is crucial!) grab your apron, and get ready to join a fun virtual cooking party!
What you'll need:
dough scraper (optional* but useful)
1 small stock pot (for sauce)
1 medium stock pot (for boiling ravioli)
mixing bowl (for ricotta)
1 whisk (or fork)
wooden/marble board (for rolling) or any smooth flat kitchen surface area
slotted serving spoon (for pulling out ravioli from water), can use a sifter or any high heat slotted utensil
Ravioli stamp/cutter (can use biscuit cutter or a cookie cutter that is at least 3inches)
1 dish towel
● ¼ cup Olive Oil
● 4 cloves garlic, minced
● 1-32 oz can of Italian plum tomatoes; chopped and in their juice
● 1 tsp tomato paste
● 1 tsp dried oregano
● 1 tsp salt
● ½ tsp black pepper
● 2 ¼ cup flour, extra for dusting
● 5 eggs
● ½ tsp salt
● 3 tsp milk
● 1 Tb Orange Juice or Honey
● .5 lb Ricotta
1/4 lb mozzarela
